Finally! Although it's 8:14 PM, it's still Friday and not just any Friday, but right here on WifeyMommyPreneur, it "Foodie Friday"!!
So without any further delay, I give you the delicious recipe of the week. This recipe was given to me by my girl

Chicken Talmale Pie
1 box of "Jiffy" Corn Bread Mix
1 egg
1/3 cup milk (whatever type of milk you use)
1 can of corn (any brand - no salt added)
2 chicken leg quarters
1 small onion (chopped)
2 cloves of garlic (minced)
2 limes (squeezed)
Seasoning Salt (whatever you use)
Lemon Pepper Seasoning
Chili Powder
Oregano
Shredded Cheddar Cheese (Optional)
2 TB Sugar (Optional)
I boiled the chicken in the crock pot (you can cook it in a pot over the stove too, just make sure you cook in on medium or low - slow cook it). Just put enough water or chicken broth to cover the meat (you want to make sure you don't dilute the seasonings); add the 1 small onion, 2 cloves of garlic (minced), lime juice from 2 limes, Seasoning salt (at your discretion), Lemon Pepper seasoning (at your discretion), chili powder (at your discretion) and just 2 or 3 shakes of oregano (or at your discretion). :)
Here's what it looked like in my crock pot....
Cook that chicken until its falling off of the bones. Then remove the meat from the bones and put it in bowl. Put some of the broth that the chicken cooked in into your bowl as well. That's some good flavor!

Then start working on the Corn Bread Mix...
Follow the instructions on the box, BUT! You're gonna add the 1 can of corn and about 2 table spoons of sugar (or at your discretion). We like our cornbread like cake in this house. :)
Only put half of the mixture in the pan to bake. As so......
Bake as instructed; until golden brown on the top.
Once it's baked take the chicken you sat to the side and spoon it over the cornbread. Make sure you cover it evenly and it's okay to let that juice get on top of that cornbread too. Nothing wrong with a little flavor!
Then spoon the remaining cornbread batter over the chicken. (I didn't get to take the pictures of this part, but just make sure you cover the chicken as evenly as possible by dolloping the batter on top of it. It doesn't have to be perfect, because when it bakes it's gonna spread out evenly.)
Bake until once again, the cornbread is golden brown on top. (If you added a lot of the juice from the chicken, make sure you let it bake long enough so that most of the juice is gone).
When you pull it out, it should look a little something like THIS!
While it's still hot you can put about 1/2 cup of shredded cheddar cheese on top.
