WMP "Foodie Friday" Recipe! - Chicken Tamale Pie


Finally!  Although it's 8:14 PM, it's still Friday and not just any Friday, but right here on WifeyMommyPreneur, it "Foodie Friday"!!

So without any further delay, I give you the delicious recipe of the week.  This recipe was given to me by my girl Goldie Faye!  (Thanks Love)  xoxo

Chicken Talmale Pie



1 box of "Jiffy" Corn Bread Mix
1 egg
1/3 cup milk (whatever type of milk you use)
1 can of corn (any brand - no salt added)
2 chicken leg quarters
1 small onion (chopped)
2 cloves of garlic (minced)
2 limes (squeezed)
   

Seasoning Salt (whatever you use)
Lemon Pepper Seasoning
Chili Powder
Oregano

Shredded Cheddar Cheese (Optional)
2 TB Sugar (Optional)

I boiled the chicken in the crock pot (you can cook it in a pot over the stove too, just make sure you cook in on medium or low - slow cook it).  Just put enough water or chicken broth to cover the meat (you want to make sure you don't dilute the seasonings); add the 1 small onion, 2 cloves of garlic (minced), lime juice from 2 limes, Seasoning salt (at your discretion), Lemon Pepper seasoning (at your discretion), chili powder (at your discretion) and just 2 or 3 shakes of oregano (or at your discretion).  :)  

Here's what it looked like in my crock pot....



Cook that chicken until its falling off of the bones.  Then remove the meat from the bones and put it in bowl.  Put some of the broth that the chicken cooked in into your bowl as well.  That's some good flavor!

Then start working on the Corn Bread Mix...

Follow the instructions on the box, BUT!  You're gonna add the 1 can of corn and about 2 table spoons of sugar (or at your discretion).   We like our cornbread like cake in this house.  :)

Only put half of the mixture in the pan to bake.  As so......



Bake as instructed; until golden brown on the top.

Once it's baked take the chicken you sat to the side and spoon it over the cornbread.  Make sure you cover it evenly and it's okay to let that juice get on top of that cornbread too.  Nothing wrong with a little flavor!

Then spoon the remaining cornbread batter over the chicken.  (I didn't get to take the pictures of this part, but just make sure you cover the chicken as evenly as possible by dolloping the batter on top of it. It doesn't have to be perfect, because when it bakes it's gonna spread out evenly.)  

Bake until once again, the cornbread is golden brown on top. (If you added a lot of the juice from the chicken, make sure you let it bake long enough so that most of the juice is gone).    

When you pull it out, it should look a little something like THIS!

While it's still hot you can put about 1/2 cup of shredded cheddar cheese on top.

Your family should love this dish!  I loved it and my husband and daughter did too!

So much going on... I Love IT!


I have been having such and inspired week!  So much has been going on!!

I posted my very first "Wordless Wendenday" entry yesterday, which feels like 2 days ago with the way I've been moving around.  That was fun!!   I look forward to doing that every week.

I have so much coming up here on the blog, it's ridiculous!

I'm not gonna say what to expect next week, just know that tomorrow is "Foodie Friday"!  I'll be posting the recipe and pictures of the Chicken Tamale Pie I baked on Tuesday.  It was so freaking good!!

Between my husband, my daughter and myself; we murdered that dish!  All of it was gone by morning.  I can't wait to share that recipe with you guys!

I didn't get a wink of sleep last night, I started working on a blog for one of my clothing designer friends on Facebook.  It is coming out so nice.  I'll be sure to share it with you when it's all ready.  Her designs are so  cute!  My daughter is her biggest fan.  You'll soon see why.

My husband is so AWESOME for helping me with the design and hooking up the graphics.  I just love him so much for that!  He is really teaching me this photoshop and html stuff.  I told you guys... he just rocks my world!!  I guess now, he can just add me to the team over at TherezMore2C Ent. (wink, wink)!

Also, last but not least...  I got a surprising message from a member of my upline? ...at Passion Parties? ...and I was told that I am still an active consultant?  Oh boy!  I'll share more with you about that later on.

Strange and Interesting Happening Of The Day...

My daughter said, "Mooooom!  There's a chicken at the window!"  I said, "What!?"  Then I went to check and there was, there was a chicken at the window!!  :)

Which is exactly what that chicken did on those plastic drawers it's sitting on!

Pinterest Invite


So I tried to sign up for an account with Pinterest about 2 days ago and they said that they were working on getting me my invite.

My first thought... "What kind of club is this?  I can't believe I'm on the waiting list!  Do they know who I am?!"  I then proceeded to check my inbox every hour on the hour to see if my invite had arrived.

Well, today I got my invite!  Yaaaay!  I've only pinned two things, so far, but already, I'm getting some "Repins".  So yeah... I can digg it.

I invited two of my Facebook friends to join the Pin Party!



And no, it's not all freaky and full of pin up girls!  I just like pin up girls and it fits... get it?  "Pin Up" and "Pin-terest"??  Not really?? That's alright....

I Found A Great Deal On A Crazy Day


Today has been a crazy day for me.  I just felt off today.  Plus, my daughter was just not happy that it was Monday.  She wanted to go to the park, but the weather was bad, so I guess she decided that she would just pretend that she didn't know anything today.  So, I spent most of our lesson time threatening to take away her computer time if she didn't get her work done.  Fun right?  Not!!

By the time we had finished all of her lessons, I was completely drained and wired at the same time, considering the 3 cups of coffee I drank.

To top it all off I'm in the process of learning HTML and Photoshop!  How exciting for a girl that just likes to have fun and ramble off about her day!  And guess who's teaching me?  My Husband!  So I have to be an A+ Student and give my undivided attention! (And I say that with a smile :)

    Wifey Moment: Let Me Know If You Want Some....


    So, in between the cooking, light cleaning, hanging out with my daughter, being Super Woman, etc....  I spent a lot of time on youtube today.  Since I've starting making videos myself, I've been getting to know some of my fellow youtubers.  I looked at some really funny videos, which I'll share with you in just a second.  :)  

    The main reason for this particular blog post is to ask all of my Wifey's out there a question.  Do you ever say to your husband, "Honey, just let me know if you want any?  I'll be around... (smiley face)"

    You may be saying, "What the heck is Mo' talking about?  Just let me know if you want any what?"

    What?  You can't tell from the "Open For Business" Thong up there!?  Well, I'm talking about "Lovin'", "Goodies", "That thing, that thing, that thing (for all my Lauryn Hill fans)"....

    My husband and I both work from home and I make it a point to pop into his studio and let him know that his favorite candy shop is open for business, if at any point in the day or night he happens to get a sweet-tooth!  (Wink, Wink)

    I'm just curious to know if my hubby is the only lucky man getting Lovin' thrown at him by his Wifey on a regular basis.  :)

    Leave me a comment below answering this question.  If you're reading this and you're "Hubby"... Does your Wifey ever let you know that she's open for business.  If not, would you be a happier man if she did?

    What SOPA Is in PLAIN English


    So all this talk about SOPA has really got me stirred up.  I cannot imagine living without the freedom to say what I want and share what I want through one of my favorite forms of media... The internet!

    For those of you who were like me, saying, "What the heck is SOPA?"  I want you to check this video out.....

    This is how SOPA could effect what you've grown to love about the internet... FREEDOM!




    And yes, I understand that there are some who abuse the internet for selfish gain, but why should everybody suffer for their bad actions?

    If that's the case, then the government should be shut down or overthrown too, considering all of the corrupt politicians in office.  I mean, REALLY?!

    This is absurd!

    Okay... I'll stop my ranting now...

    You clearly see where I stand on this issue.... What are your thoughts on this?  I'd love to know.

    The Beauty Of Being Organized

       For so long I was Miss Disorganized!  Literally.  I would wake up in the morning and just go.  I didn't have an agenda.  I knew what important things needed to get done.  But I spent a lot of my time spinning around in circles, doing this and that and not really accomplishing anything.  I was all ambition and no execution.  Is it just me?  Do you know what I'm talking about? 

    Lately I've been setting my alarm at night and planning out what needs to get done during the day, and I can't begin to tell you how much more I am getting done.  I have a lot of goals and without writing them down and scheduling my time, there is no way I am going to accomplish them.

    The first thing on my to-do list is to spend time with God.  I head straight to the coffee pot to make a cup of coffee and then head over to JoyceMeyer.Org to watch her daily broadcast.  I then usually end up praying for everybody; my family, myself, my neighbors, collegues, friends, enemies, facebook and twitter friends.. everybody.  After I do this I am so calm and collected and everything just seems to flow and run smoothly.  Most of the time my daughter is up by now and she watches Joyce with me. I pray out loud, so she always adds her in Jesus' name, Amen.  lol  I love it!

    I then get dressed and because I like to get some kind of workout in during the day and I don't neccessarily have to leave the house, I put on some jogging pants and a cute t-shirt or a sweat suit.  Something nice, yet comfortable. I still have to stay cute for my husband you know ;)  I also get the girl dressed, (after me).  I have to make sure I'm together before I can get anything else together.

    Then I start tackling my to-do list.  Lessons during the day, cleaning during lessons and during breaks, updating my facebook and twitter statuses, etc....  One thing I have learned that is invaluable is having my notebook and pen close by.  If I have a great blog idea, youtube video idea or anything, I jot that sucker down!  If I don't, I'll have another bright idea that got away from me!  And I'm not having it in 2012!!

    With all of that said, I am loving my new life of organization!  I am officially hooked on getting things done in a calm and collected manner :) 

    What do you do to make sure your days run smooth and that you are meeting your goals?  I'd love to know. Any tips?
